Homemade Chocolate

It’s not clear to me whether chocolate is GAPS allowed or not.  I’ve read that it’s allowed if tolerated.  I was dying to make homemade chocolate, and it was fun and easy!  Then I did the Coca Pulse Test with it, and predictably I reacted to it.  Well, I’m still glad I made it, but it’s going into the back of my fridge to wait until my birthday.

4 oz. Cocoa Butter
3/4 c. organic cocoa powder
1/3 c. raw honey
coarse sea salt

Melt cocoa butter in a small heavy pan or double-boiler over low heat.  When completely melted, remove from heat and stir in cocoa powder and honey.  Pour into candy clean molds, or onto a baking sheet lined with baking paper, and allow to cool at room temperature for several hours until hardened.  Remove from molds, or chop poured chocolate into chunks for use in recipes.

Note: Do not allow water to come in contact with any ingredients, pans, utensils, wet hands, etc. as it will cause the chocolate to become grainy.
