Roasted Garlic

1 head garlic
2 T. olive oil
1 t. sea salt

Preheat oven to 375 degrees F. Slice off the stem end of whole head of garlic, revealing the tips of the cloves.  Place in a small oven-proof ramekin and drizzle with olive oil.  Sprinkle with salt.  Bake for 40 minutes.  Cool for five minutes before handling.  Squeeze the cloves out with your fingers to use in recipes.
