8 large organic Medjool dates
4 slices sugar-free bacon
cojita cheese – optional
8 t. almond butter – optional
1/2 red onion, diced
Slice dates open on one side and pull out pits. Place a small rectangle of cheese inside each date, or fill each date with 1 t. almond butter, or leave them unfilled.
Cut bacon slices in half and cook in a saute pan over medium heat about five minutes until half-way cooked, soft, and not crisp. Remove to a plate to cool slightly.
Cook onion in bacon fat over medium-low heat for about 15 minutes, until soft, translucent and beginning to carmelize.
Heat broiler on low. Wrap each date with one half-slice of bacon and secure with a toothpick. Place dates in an oven-proof dish and broil about 5 minutes, watching that the bacon doesn’t get too brown.
Plate dates with a small dollop of onion on top.
