3 lb. Brussels sprouts, washed, trimmed and halved
1 package sugar free uncured bacon, diced
2 T. Olive oil
2 cloves garlic, minced
Sea salt and pepper
Place prepared Brussels sprouts into a large ovenproof dish. Cook bacon in a medium skillet until crisp. Remove bacon and reserve. Pour half of the bacon fat over the sprouts and toss to coat. Preheat oven to 450 degrees F. Pour olive oil over sprouts, add garlic and toss with salt and pepper to taste. Place sprouts into oven and roast for about 15 minutes, stirring occasionally. Remove from oven and stir in bacon. Serve.
