Buckwheat Pancakes

This is another recipe that will depend on whether you can tolerate buckwheat.

1 c. organic buckwheat flour
3 egg yolks
1/2 t. sea salt
1/2 t. baking soda
1 t. vanilla extract
2 T. ghee
1/3 c. apple sauce
1/4 c. water

Stir all ingredients together until smooth. Preheat a griddle and grease it with ghee or duckfat. When the griddle is hot, spoon batter onto the griddle in tablespoon-sized mounds. Fry pancakes until the bottom is set, then turn over and fry until cooked through. Serve with Duckfat Honey Butter and/or Lemon Curd.
