What is MCAS?
Mast Cell Activation Syndrome (MCAS) is a chronic condition that affects all organ systems. It can cause severe, disabling symptoms every day, including potentially fatal anaphylaxis. MCAS often occurs with other chronic conditions like Ehlers-Danlos Syndrome (EDS) and Postural Orthostatic Tachycardia Syndrome (POTS). This recipe is low in carbs, higher in fat, protein, and fiber, while still being lower in histamine and histamine-releasing foods, lower in oxalates, and free of nightshades, grains, and gluten. The bucket theory
The bucket theory simplifies understanding symptom reactions with MCAS. Imagine your body as an empty bucket you don’t want to overflow. Reactions to various stimuli fill the histamine bucket at different rates, forming the total histamine level (how full your bucket is). More histamine means more symptoms. By managing triggers, reducing exposures, and taking medications and supplements, you can control your bucket’s level.

Lower Histamine Fudgy Brownies
Ingredients
- 1 cup blanched almond flour
- ¼ cup unsweetened cocoa powder
- 1 tsp grain-free baking powder
- ¼ tsp sea salt
- 3 tbsp Choczero maple syrup
- ¼ up homemade yogurt or water
- 1 egg
- 2 tbsp olive oil
- 1 tsp vanilla extract
- ¼ cup Choczero dark chocolate baking chips
Instructions
- Preheat oven to 350 °F. Line a square glass 9×9 inch pan with baking paper.
- Combine all ingredients in one bowl, mixing until fully combined
- Press the batter into the prepared pan. Bake for 15 minutes, or until the center is puffed and the edges are set. Cool a few minutes before consuming, or freeze individual servings for later consumption.
What to serve along with this recipe
This cake tastes great with a cup of Rooibos tea!
Leftovers and reheating
Leftovers keep in the fridge for up to 5 days, but if you have histamine intolerance or MCAS then freeze leftovers immediately. Freeze for up to 3 months.
