Lower Histamine Veggie Patties

Here is a recipe for savory lower histamine veggie patties. They are gluten-free, dairy-free, soy-free, lower in oxalates, and lower in histamine, and they pair well with lower histamine pistachio crusted salmon or can be enjoyed by themselves with tartar sauce.

Ingredient notes for these lower histamine veggie patties

This recipe is made with cooked millet, fresh vegetables, and grated fresh cassava root. If you can’t find fresh cassava root you can substitute frozen — just thaw it out prior to grating it.

What is MCAS?

Mast Cell Activation Syndrome (MCAS) is a chronic condition that affects all organ systems. MCAS is serious and disabling and people with MCAS experience often significant and debilitating symptoms daily, including anaphylaxis, which can be fatal.MCAS is often found in combination with other chronic conditions such as Ehlers-Danlos Syndrome (EDS) and Postural Orthostatic Tachycardia Syndrome (POTS).

Frequently healthcare providers do not know about MCAS, and the tests for MCAS are problematic because they are not uniformly reliable. MCAS can be difficult to manage. Treatments include blocking mast cell mediators with anti-histamines and mast cell stabilizers, as well as avoiding triggers.

This recipe is low in carbs, higher in fat, protein, and fiber, while still being lower in histamine and histamine-releasing foods, lower in oxalates, and free of nightshades, grains, and gluten. The bucket theory

The bucket theory offers a helpful analogy for understanding symptom reactions with MCAS.Think of your body as an empty bucket that you want to keep from overflowing. Different foods and activities fill your histamine bucket at different speeds but they combine to form the total level of histamine in your body (how full your bucket is). A fuller bucket means you have more histamine symptoms. When you manage triggers, reduce exposure to known triggers, and take medications and supplements to reduce histamine, you can manage the level of your bucket.

Lower Histamine Veggie Patties

Equipment

  • rice cooker or Instant pot

Ingredients

  • cup dry millet rinsed
  • 1 ⅓ cups water
  • 1 ½ cups grated raw cassava root
  • 4 oz. mushrooms minced
  • 1 clove garlic minced
  • 2 scallions minced
  • 3 radishes grated
  • 1 medium zucchini grated
  • 4 tbsp coconut oil divided
  • 1 tsp sea salt

Instructions

  • Place the millet and the water in the rice cooker or Instant Pot and set to the "rice" setting.
  • While the millet cooks place 2 tbsp of the coconut oil in a medium saute pan. Add the cassava, mushrooms, garlic, scallions, radishes, zucchini, and salt. Saute over medium heat for five minutes. Turn off the heat and allow to cool for five minutes. The cassava may stick to the pan, but if you leave it to sit it makes it easier to release from the pan.
  • Once the millet is done, carefully release the pressure and remove the lid. Add the sauteed vegetables to the millet, and stir to combine. Preheat the oven to 375 °F.
  • Put the remaining coconut oil on a sheet pan, and spread it out if it is solid. Using a ⅓ measuring cup, scoop the vegetable mixture into mounds on the pan, flatting them to about 1-inch thick using the back of the measuring cup. Continue making the patties thus, spacing them about two inches apart.
  • Place the pan in the oven, and bake the patties for 30 minutes. Remove them from the pan and serve immediately with tartar sauce, or freeze individually for later consumption.

Leftovers and reheating

Leftovers keep in the fridge for up to 5 days, but if you have histamine intolerance or MCAS you will want to freeze leftovers right away.Freeze for up to 3 months.To reheat, microwave for 2-3 minutes, depending on your microwave’s power. Or, place in a saucepan, over medium-low heat, stirring occasionally, until piping hot.
