Meatballs:
1 lb. grass fed ground beef
1/2 c. crimini mushrooms, chopped
3-6 cloves Roasted Garlic
1 egg
1/2 t. dried oregano
1/2 t. dried basil
2 T. fresh parsley, finely chopped
1/2 t. sea salt
1/4 t. black pepper
Sauce:
1 T. olive oil, ghee or duck fat
1/2 c. Carmelized Onions
8 oz. crimini mushrooms, sliced
1 t. dried Thyme
1 c. beef broth
1/4 c. red wine
Preheat oven to 375 degrees F. Combine meat with onion, mushrooms, garlic and remaining meatball ingredients. Mix well with your hands until thoroughly combined. Form about 15 balls, place on a rimmed baking sheet, and bake for 25 minutes, until 160 degrees internal temperature (or juices run clear).
While meatballs are baking, saute mushrooms in the fat for about five minutes. Add remaining sauce ingredients and cook for about ten more minutes.
Serve meatballs hot with some sauce. Good with a side of steamed spaghetti squash or Wild Mushroom Rutabaga Cakes.
