Here is my recipe for supergut carrot cake muffins!

This recipe calls for plain unsweetened yogurt, such as my homemade coconut yogurt. I’ve been doing the Supergut diet for the last couple of weeks, which is helping me to get my SIBO under control. This diet is based on the book Super Gut by William Davis, MD, and for it you avoid sugars, and all grains, and otherwise can eat almost anything. I’m finding it a welcome change after being so restricted with the SCD, lower histamine, lower oxalate, lower sulfur, and other diets I’ve tried to manage my symptoms.
The Supergut diet also relies on making homemade probiotic-specific yogurt to heal the gut and crowd out unwanted microorganisms. I noticed immediate relief from my SIBO symptoms of acid reflux, bloating, and constipation as soon as I started making and eating the yogurt. I’m following the SIBO protocol in Davis’ book, which includes a homemade yogurt made with three strains of probiotics. As a side benefit of this diet, I’ve been experiencing less inflammation, WAY better sleep, and improved mood. It makes me realize how much of my MCAS is driven by SIBO.
Davis recommends using organic half-and-half for his yogurt recipes, which so far has been working well for me. In the past, I thought I couldn’t tolerate dairy of any sort. But Supergut yogurt is cultured for 24-36 hours, which denatures the milk proteins, making them much more digestible.
This recipe also calls for the sweetener of your choice — honey, maple syrup, etc. I use ChocZero maple syrup because it is sugar-free and doesn’t feed the SIBO bugs I’m trying to crowd out of my gut.
Mast Cell Activation Syndrome (MCAS) is a chronic condition that affects all organ systems. MCAS is serious and disabling and people with MCAS often experience significant and debilitating symptoms daily, including anaphylaxis, which can be fatal.
MCAS is often found in combination with other chronic conditions such as Ehlers-Danlos Syndrome (EDS) and Postural Orthostatic Tachycardia Syndrome (POTS).
Healthcare providers frequently do not know about MCAS, and the tests for MCAS are problematic because they are not uniformly reliable. MCAS can be difficult to manage. Treatments include blocking mast cell mediators with anti-histamines and mast cell stabilizers, as well as avoiding triggers.

The bucket theory offers a helpful analogy for understanding symptom reactions with MCAS.
Think of your body as an empty bucket that you want to keep from overflowing. Different foods and activities fill your histamine bucket at different speeds but they combine to form the total level of histamine in your body (how full your bucket is). A fuller bucket means you have more histamine symptoms. When you manage triggers, reduce exposure to known triggers, and take medications and supplements to reduce histamine, you can manage the level of your bucket.

These muffins are delicious on their own, or with a smear of butter or coconut oil.
Leftovers keep in the fridge for up to 5 days, but if you have histamine intolerance or MCAS you will want to freeze leftovers right away.
