Supergut Italian Sausage Soup

Here is my recipe for Supergut Italian sausage soup. It’s a hearty warming and satisfying soup for breakfast, lunch, or dinner!

I follow the Supergut diet and it has helped reduce inflammation and heal my gut after years of antibiotic use and the resultant SIBO. This recipe makes a satisfying soup that is grain-free, dairy-free, soy-free, and delicious!

The Supergut diet is based on Dr. William Davis’ book, Super Gut. The book advocates using healing foods to heal the gut, such as homemade probiotic-rich yogurt.

Ingredient notes for Supergut Italian Sausage Soup

This recipe calls for my lower histamine chicken broth. You can make a big batch ahead and freeze it in pint mason jars for making soups and stews!

What is MCAS?

Mast Cell Activation Syndrome (MCAS) is a chronic condition that affects all organ systems. MCAS is serious and disabling and people with MCAS often experience significant and debilitating symptoms daily, including anaphylaxis, which can be fatal.

MCAS is often found in combination with other chronic conditions such as Ehlers-Danlos Syndrome (EDS) and Postural Orthostatic Tachycardia Syndrome (POTS).

Healthcare providers frequently do not know about MCAS, and the tests for MCAS are problematic because they are not uniformly reliable. MCAS can be difficult to manage. Treatments include blocking mast cell mediators with anti-histamines and mast cell stabilizers, as well as avoiding triggers.

The bucket theory

The bucket theory offers a helpful analogy for understanding symptom reactions with MCAS.

Think of your body as an empty bucket that you want to keep from overflowing. Different foods and activities fill your histamine bucket at different speeds but they combine to form the total level of histamine in your body (how full your bucket is). A fuller bucket means you have more histamine symptoms. When you manage triggers, reduce exposure to known triggers, and take medications and supplements to reduce histamine, you can manage the level of your bucket.

Supergut Italian Sausage Soup

Equipment

  • Pressure Cooker such as Instant Pot

Ingredients

  • 3 tbsp olive oil
  • 1 small onion, diced
  • 12 oz Italian sausage, sliced
  • 6 cups Lower Histamine Chicken Broth
  • 1 cup chopped greens such as kale or spinach
  • 1 daikon radish, sliced
  • 1 fennel bulb, diced
  • 1 carrot, sliced
  • 2 celery stalks, chopped
  • 14 oz. diced tomatoes optional
  • 1 tsp dried oregano
  • 1 tsp sea salt

Instructions

  • Turn the Instant Pot to the "Soup" setting and add the olive oil and sausage. Add the sausage and onion and cook for about five minutes.
  • Add the remaining ingredients and secure the lid of the Instant Pot. Once the "soup" program has finished running (30 minutes) release the pressure naturally. Serve immediately or freeze in glass mason jars for future consumption.

Leftovers

Leftovers keep in the fridge for up to 5 days, but if you have histamine intolerance or MCAS you will want to freeze leftovers right away.
