Supergut Yogurt Cake Recipe

Ingredients
  

  • 1 cup homemade yogurt
  • ¼ cup butter or coconut oil melted
  • 1 tsp vanilla extract
  • 3 eggs
  • 2 lemons zest and juice
  • 2 cups blanched almond flour
  • 2 tbsp coconut flour
  • ¼ cup ChocZero Maple Syrup
  • 2 tsp baking powder
  • ½ cup blueberries optional

Instructions
 

  • Preheat the oven to 350 °F
  • Oil and line a loaf pan or 9-inch round pan with parchment paper. Set aside.
  • In a mixing bowl, whisk together the yogurt, butter, vanilla, lemon juice, and zest.
  • Add the remaining ingredients and fold together with a spatula until combined.
  • Pour the mixture into the prepared pan.
  • Bake for 45-55 minutes, until the top is golden and the cake springs back when touched.
  • Cool in the pan for 15 minutes, then invert it onto a baking rack to cool completely. Cut into slices and serve immediately or freeze portions for later consumption.

This recipe is low in carbs, higher in fat, protein, and fiber, while still being lower in histamine and histamine-releasing foods, and free of refined-sugar, grains, and gluten. The bucket theory simplifies understanding symptom reactions with MCAS. Imagine your body as an empty bucket you don’t want to overflow. Reactions to various stimuli fill the histamine bucket at different rates, forming the total histamine level (how full your bucket is). More histamine means more symptoms.
