Preheat the oven to 350 °F. Line a cookie sheet with a Silpat or baking paper.
In the bowl of a stand mixer, combine all of the ingredients. Mix for about 30 seconds until fully combined. Place the dough into the refrigerator for about 30 minutes to chill.
Use a cookie scoop to place 12 cookies onto the prepared cookie sheet. Bake for 12 minutes, or until the center of the cookies is puffed and the edges are set. Cool for a few minutes before consuming, or freeze for later.
