Preheat the oven to 275. Line a baking sheet with a Silpat or baking paper. Set it aside.
Place the desiccated coconut, salt, soda, and seeds into a food processor. Pulse several times until the mixture is crumbly but not too fine. In a small bowl, combine the honey, olive oil, and vanilla extract.
Pour the seed mixture into a large bowl. Add the honey mixture and stir until evenly mixed. Spread the mixture in a single layer onto the prepared pan.
