Ingredients
  

  • 1 cup organic hulled sunflower seeds
  • 1 cup organic pumpkin seeds
  • 1 cup unsweetened desiccated coconut
  • ¼ cup honey or maple syrup
  • 1 tbsp olive oil
  • 1 tsp vanilla extract
  • ½ tsp sea salt
  • ½ tsp baking soda

  • Silpat

Method
 

  1. Preheat the oven to 275. Line a baking sheet with a Silpat or baking paper. Set it aside.
  2. Place the desiccated coconut, salt, soda, and seeds into a food processor. Pulse several times until the mixture is crumbly but not too fine. In a small bowl, combine the honey, olive oil, and vanilla extract.
  3. Pour the seed mixture into a large bowl. Add the honey mixture and stir until evenly mixed. Spread the mixture in a single layer onto the prepared pan.
  4. Bake for 25 minutes, until golden brown.
