Supergut Grain-Free Rolls

Equipment

  • muffin pan or English muffin rings
  • high-speed blender or food processor

Ingredients
  

  • cups raw sprouted cashews or cashew flour unsalted
  • 4 eggs
  • 3 tbsp olive oil
  • ½ tsp sea salt
  • 1 tsp baking soda
  • 2 tsp apple cider vinegar

Instructions
 

  • Preheat the oven to 350 °F. Line a 12-hole muffin pan with paper liners OR line a baking sheet with parchment paper and place six greased English muffin rings on it.
  • Place all of the ingredients into the bowl of a high-speed blender or food processor. Blend until the batter is smooth.
  • Divide the batter evenly between the twelve muffin cups or the six English muffin rings.
  • Bake for 18-20 minutes or until firm on top and lightly golden.
  • Cool 5 minutes before inverting from the pan. Slice English muffin-sized rolls in half for use as burger buns or sandwich rolls. Consume immediately or freeze for later consumption.
