1½cupsraw sprouted cashews or cashew flourunsalted
4eggs
3tbspolive oil
½tspsea salt
1tspbaking soda
2tspapple cider vinegar
Instructions
Preheat the oven to 350 °F. Line a 12-hole muffin pan with paper liners OR line a baking sheet with parchment paper and place six greased English muffin rings on it.
Place all of the ingredients into the bowl of a high-speed blender or food processor. Blend until the batter is smooth.
Divide the batter evenly between the twelve muffin cups or the six English muffin rings.
Bake for 18-20 minutes or until firm on top and lightly golden.
Cool 5 minutes before inverting from the pan. Slice English muffin-sized rolls in half for use as burger buns or sandwich rolls. Consume immediately or freeze for later consumption.
