Preheat oven to 350 degrees F. Line a baking sheet with silpat or baking paper.
In a large bowl, whisk together the almond flour, salt, and baking soda. Add the eggs, olive oil, sweetener, and the optional chocolate chips, stirring until combined. Drop batter in about 1/4 c. blobs and place them 2 inches apart on the baking sheet. Bake for about 14-16 minutes until golden brown.
