Lower Histamine Chocolate Valentine Bites

Ingredients
  

  • ½ cup butter
  • 1 bag ChocZero sugar-free baking chips
  • ¼ cup ChocZero sugar free maple syrup or up to ½ cup if you like them sweeter
  • 1 tbsp vanilla extract
  • 3 eggs beaten
  • cups sunflower seed flour

Instructions
 

  • Preheat the oven to 350 °F. Line 12 muffin cups with paper muffin lines.
  • Melt the butter and chocolate chips in a small bowl in the microwave for about 2 minutes, stirring every 30 seconds to make sure the mixture does not burn. Remove from the microwave and stir until smooth. Set aside to cool for a few minutes.
  • Add the beaten eggs, maple syrup, vanilla, and sunflower flour to the chocolate mixture, stirring until smooth. Scoop the batter into the prepared muffin liners.
  • Bake for 20-22 minutes, until a toothpick inserted into the center of a muffin comes out clean. Remove from the oven, and tilt each cupcake to allow the bottom to vent as they cool for several minutes. Serve immediately, or freeze for later consumption.
