Combine chickpeas, salt, olive oil, and spices in the bowl of a food processor fitted with a metal blade. Process until smoothly combined.
Add the cold water to the mixture and process for 1-2 minutes, scraping down the sides of the bowl periodically, until very smooth.
Portion into six 4 oz. mason jars, cap tightly, and freeze for later consumption. Or serve immediately with tolerated dipping veggies, cassava chips, or cassava pretzels.
