Lower Histamine Pumpkin Pie

Ingredients
  

  • 2 cups cooked pumpkin puree
  • ¼ cup raw hemp milk or coconut milk
  • 8 organic Medjool dates
  • ½ cup hot water
  • ¼ tsp ground cinnamon if tolerated
  • ¼ tsp ground ginger
  • ¼ tsp sea salt
  • 6 egg yolks

Instructions
 

  • Preheat oven to 350 degrees. Combine dates and hot water, and allow to stand for about ten minutes. Combine all ingredients in blender and puree until smooth. Spray a pie tin with non-stick spray, or butter it with ghee. Pour pumpkin mixture into pie tin. Place in oven and bake until a knife inserted in the middle comes out clean, about 40 minutes.
