Combine all ingredients in a mason jar or another container with a tight-fitting lid. Cap tightly and then shake vigorously for about 15 seconds until it forms a smooth mixture.
Heat your oil of choice in a small ceramic frying pan over medium-low heat. Pour the vegan egg mixture into the pan. If you are making scrambled eggs stir the mixture around in the pan several times while until it reaches your preferred doneness. If you are making an omelette, leave the mixture to set up for about a minute before adding toppings.
