Instructions
Preheat the oven to 425 °F.
Place the oil, cumin, coriander, salt, lemon juice, and coco aminos in a pint mason jar. Shake vigorously to combine. Set aside.
Arrange the prepared vegetables on a rimmed sheet pan. Drizzle the sauce over the vegetables and put it into the oven for 20 minutes. Midway through the roasting time, gently toss the veggies with a spatula.
Serve immediately or freeze portions in glass containers for later.
