Lower Histamine Zucchini Flour Rolls

  • 6-hole muffin pan
  • high-speed blender such as Vitamix

Ingredients
  

  • ¼ cup zucchini flour
  • 4 eggs
  • 1 tsp baking soda
  • ½ tsp sea salt
  • 4 tbsp butter or olive oil

Instructions
 

  • Preheat the oven to 350 °F. Line the muffin pan with six muffin liners.
  • Combine all ingredients in a high-speed blender until smooth, about 30 seconds. Divide the batter between the six muffin cups. Bake for 20 minutes, until the tops are firm and lightly browned.
  • Remove from the oven and cool slightly. Serve immediately with butter or ghee, or freeze in an airtight container for later consumption.
