Preheat the oven to 350 °F. Line the muffin pan with six muffin liners.
Combine all ingredients in a high-speed blender until smooth, about 30 seconds. Divide the batter between the six muffin cups. Bake for 20 minutes, until the tops are firm and lightly browned.
Remove from the oven and cool slightly. Serve immediately with butter or ghee, or freeze in an airtight container for later consumption.
