Use a ceramic baking sheet, or line a baking sheet with a Silpat.
Grind the chocolate chips in a blender, stopping frequently to shake the blender cup, until they are nearly powder.
Place all of the ingredients in the bowl of a stand mixer and mix until the dough comes together and is homogenous.
Form disks with your hand using about 1 tbsp dough for each cookie. Place them on the prepared pan about 1 inch apart. Bake the cookies for 15 minutes. Cool slightly, and consume immediately, or freeze for later.
