chestnut flour

grain-free baking powder, such as Otto's

vanilla extract

egg

melted coconut oil

Instructions
Preheat oven to 375 degrees F. Line a baking sheet with a Silpat or baking paper.
Combine dry ingredients in a bowl and whisk to combine. Add the egg and coconut oil, stirring until it forms a dough.
Use a cookie scoop, or your hands, and make 9 flattened balls. Place them on the prepared baking sheet. Bake for 10 minutes.
Cool. Serve immediately, or freeze for later consumption.
