Supergut Zucchini Crust Pizza

Here is my recipe for Supergut zucchini crust pizza. It’s a hearty warming and satisfying grain-free pizza alternative!

I follow the Supergut diet and it has helped reduce inflammation and heal my gut after years of antibiotic use and the resultant SIBO. This recipe makes a satisfying soup that is grain-free, dairy-free, soy-free, and delicious!

The Supergut diet is based on Dr. William Davis’ book, Super Gut. The book advocates using healing foods to heal the gut, such as homemade probiotic-rich yogurt.

Ingredient notes for Supergut Italian Sausage Soup

This recipe calls for my blanched almond flour. I like to top this pizza with mushrooms and Amylu’s Italian chicken sausage, but you can use whatever pizza toppings you like!

What is MCAS?

Mast Cell Activation Syndrome (MCAS) is a chronic condition that affects all organ systems. MCAS is serious and disabling and people with MCAS often experience significant and debilitating symptoms daily, including anaphylaxis, which can be fatal.

MCAS is often found in combination with other chronic conditions such as Ehlers-Danlos Syndrome (EDS) and Postural Orthostatic Tachycardia Syndrome (POTS).

Healthcare providers frequently do not know about MCAS, and the tests for MCAS are problematic because they are not uniformly reliable. MCAS can be difficult to manage. Treatments include blocking mast cell mediators with anti-histamines and mast cell stabilizers, as well as avoiding triggers.

The bucket theory

The bucket theory offers a helpful analogy for understanding symptom reactions with MCAS.

Think of your body as an empty bucket that you want to keep from overflowing. Different foods and activities fill your histamine bucket at different speeds but they combine to form the total level of histamine in your body (how full your bucket is). A fuller bucket means you have more histamine symptoms. When you manage triggers, reduce exposure to known triggers, and take medications and supplements to reduce histamine, you can manage the level of your bucket.

Supergut Zucchini Crust Pizza

Ingredients
  

  • ½ cup blanched almond flour
  • 2 medium fresh zucchini (about 2 cups) shredded
  • 2 eggs
  • 1 tsp dried Italian seasoning
  • ½ tsp sea salt
  • ½ cup baby bella mushrooms sliced
  • 2 tbsp pesto
  • 2 oz. mozzarella cheese shredded
  • 1 Amylu's Italian Sausage sliced

Instructions
 

  • Preheat the oven to 400 °F. Line a baking sheet with parchment paper.
  • Grate the zucchini into a bowl. Transfer it to a nut milk bag or wrap it in a piece of cheesecloth, and squeeze out all of the excess liquid over the sink. Place the zucchini in a medium bowl.
  • Add the two eggs, almond flour, Italian seasoning, and salt. Mix well with a spoon. If the mixture seems too wet at another tablespoon of almond flour.
  • Transfer the dough to the prepared baking sheet and flatten it with your hands to form a 10-inch round (or two 5-inch rounds). Place the pan into the oven and back for 15 minutes, until the edges are browned and the crust is firm. Remove from the oven.
  • Spread the pesto over the top fo the crust. Top with the mushrooms and sausage, then the grated cheese. Bake for an additional 10 minutes, until the cheese is melted and bubbly.
  • Serve immediately or freeze portions for later consumption.
