Ingredient notes for this broccoli fennel soup

This recipe uses my Lower Histamine Vegetable Broth as the base. I like to use Celtic Sea Salt for cooking and seasoning because it is free of the microplastics found in many types of salt, even Himilayan salt! Broccoli and Fennel are naturally lower in oxalates, so they are a great choice. If you are sensitive to oxalates you may wish to omit celery because it is moderate in oxalates.

If you are concerned about salicylates you can swap out the broccoli for Choko, also knowns as chayote squash. If you’ve never heard of this vegetable before then check out this post!

What is MCAS?

Mast Cell Activation Syndrome (MCAS) is a chronic condition that affects all organ systems. MCAS is serious and disabling and people with MCAS experience often significant and debilitating symptoms daily, including anaphylaxis, which can be fatal.

The bucket theory

The bucket theory offers a helpful analogy for understanding symptom reactions with MCAS.

Think of your body as an empty bucket that you want to keep from overflowing. Different foods and activities fill your histamine bucket at different speeds but they combine to form the total level of histamine in your body (how full your bucket is). A fuller bucket means you have more histamine symptoms. When you manage triggers, reduce exposure to known triggers, and take medications and supplements to reduce histamine, you can manage the level of your bucket.

Lower Histamine Broccoli Soup Recipe

Equipment

  • Pressure cooker
  • stick blender

Ingredients
  

  • 2 tbsp olive oil
  • ½ tsp sea salt
  • 2 cups raw broccoli roughly chopped
  • 1 cups raw fennel chopped
  • ¼ cup raw onion chopped
  • ½ tsp thyme
  • 1 clove garlic minced
  • 1 bay leaf
  • ¾ cup celery diced
  • 4 cups Lower Histamine Vegetable Broth

Instructions
 

  • Combine all of the ingredients in the pot of an Instant Pot. Secure the lid and set it to the "Soup" program.
  • When the cycle ends, release the pressure manually. Remove the lid carefully. Puree using a stick blender, being careful of the hot steam.
  • Serve immediately or portion in glass containers for freezer storage.
