Equipment notes for sous vide egg bites

This recipe is made using a sous vide stick such as this one. A sous vide stick is placed in a pot of water and it has a tiny fan to stir the water and a heating element to warm it. Sous vide cooking gradually brings the food up to the desired temperature so it preserves moisture and food is never overcooked. These egg bites come out creamy with the sous vide method.

What is MCAS?

Mast Cell Activation Syndrome (MCAS) is a chronic condition that affects all organ systems. MCAS is serious and disabling and people with MCAS often experience significant and debilitating symptoms daily, including anaphylaxis, which can be fatal.

MCAS is often found in combination with other chronic conditions such as Ehlers-Danlos Syndrome (EDS) and Postural Orthostatic Tachycardia Syndrome (POTS).

Healthcare providers frequently do not know about MCAS, and the tests for MCAS are problematic because they are not uniformly reliable. MCAS can be difficult to manage. Treatments include blocking mast cell mediators with anti-histamines and mast cell stabilizers, as well as avoiding triggers.

The bucket theory

The bucket theory offers a helpful analogy for understanding symptom reactions with MCAS.

Think of your body as an empty bucket that you want to keep from overflowing. Different foods and activities fill your histamine bucket at different speeds but they combine to form the total level of histamine in your body (how full your bucket is). A fuller bucket means you have more histamine symptoms. When you manage triggers, reduce exposure to known triggers, and take medications and supplements to reduce histamine, you can manage the level of your bucket.

Sous Vide Egg Bites

Equipment

  • sous vide stick such as this one
  • large pot
  • 7 – 4 oz. Mason Jars with lids and bands

Ingredients
  

  • 6 eggs
  • ½ cup cottage cheese
  • 2 tbsp heavy cream
  • ½ tsp sea salt
  • 2 oz. Gouda cheese cubed
  • 2 slices bacon

Instructions
 

  • Fill a large pot with water and place a sous vide stick into the water according to the manufacturer's directions. Set the temperature to 170 °F.
  • Cook the bacon in a pan over medium heat until crisp. Set aside until cool, and then roughly chop the bacon.
  • Combine the eggs, cottage cheese, Gouda cheese, cream, and salt in a blender. Mix until thoroughly blended, about 20 seconds.
  • Spray the mason jars with cooking spray. Place a few bacon crumbles in the bottom of each jar. Divide the egg mixture between the jars. Screw the lids onto the jars until just barely tightened. Do not over-tighten as the jars can explode in the hot water bath.
  • Submerge the jars in the hot water bath and set the timer for 55 minutes. When the time is up, remove the jars using tongs and place them on a towel to cool. Serve immediately, refrigerate for up to a week, or freeze for later consumption. The texture becomes slightly grainy after being frozen, but it's still delicious!

These muffins are delicious on their own, or with a smear of butter or coconut oil.

Leftovers

Leftovers keep in the fridge for up to 5 days, but if you have histamine intolerance or MCAS you will want to freeze leftovers right away.
